Xanthan NF, USP is a high-molecular-weight polysaccharide produced by the fermentation of Xanthomonas campestris. It appears as a white to light cream powder that readily disperses in water to form highly viscous solutions, even at low concentrations. It is stable in a wide pH range (2–12) and resistant to temperature, electrolytes, and enzymatic degradation.
